^Firstly, you are in the wrong section, so ask a mod to move it OpenSource.

Now, abt ur actual question.
GDM : Gnome Display Manager , It is like a session manager that allows you to login to the linux system with a desktop enviroment of your choice.

gtk+ themes: These are , as the name indicates, themes for gtk+.Usable on gnome and xfce

metacity : Metacity is a window manager, used by default in gnome.

Nautilus : It is the default file manager of Gnome.

gdm is login manager, as you'd see in windows during login
gtk is GUI toolkit
metacity is window manager used by GNOME. Window Manager is a very difficult thing to explain to windows users. It's like an underlying layer for your GUI which implements lots of functions. There is X server which draws the GUI, window manager which does a lot of system function and then the look and feel on the top is the desktop environment.
nautilus is file manager like you have Explorer on windows
BTW, this belongs to Open Source.
