Considering you are on XP:

Control Panel -> Network Connections (in classic view),
Right click on any connections you don't want showing an icon -> "Properties"
Uncheck "Show icon in notification area when connected"
OK.

On Vista:

Right click on the System tray
Notification Area
Uncheck Network.

Just Double-Click on the Computers Icon in System Tray...

The list of connections will open-up... As you said that you don't use the internet/LAN then you can totally Disable them...

Just right-click on the listed connections one-by-ne and selecte "Disable" from the drop-down menu...

That's it!!! :)

Networking isn't a task in the task manager. It will hide the icon while the network will remain active. If you want to disable the network then do what a_2_z123 said.
