High End Gaming & Graphics Machine- Advice needed

I am getting a machine for High End Gaming & Graphics. I have decided on following components, thanks to the "PC Buying Guide" thread.

Processor Intel Core i7 2600k
Motherboard ASUS P8Z68 V PRO
RAM Gskill Ripjaws X F3-12800CL9D-8GBXL
HDD WDC Black 1TB SATA3
DVD Writer LG 22X SATA DVD
Mouse Razer Imperator
Keyboard Logitech G110

Now I need advice on following items-

SSD - All my programs & OS are occupying about 100 GB. Will 120 GB be enough or should I go for more capacity (OCZ 2.5 SSD VTX3- 25SAT3-240G)?

CPU Cooler - I am not too much into overclocking manually. I will OC only if there is a simple & safe way like a switch or software tool from the manufacturer. So, do I need after market cooler? Which one?

Graphic Card - Now I have Dell UltraSharp U2311H 23inch Monitor with 1920x1080 resolution. But I will be buying 27" monitor next year. So I need suggestion on graphics card that will support games at 2560x1440 resolution with full effects. Thought about ASUS GTX 560 Ti DirectCU II in SLI but it does not deliver full resolution except with a dsub connection. I am not sure whether a dsub will be good enough and what benefits other (HDMI, dislay port etc.) have to offer. Again, no manual OC. Cards should be long lasting.

Also, I have heard AMD is bringing out 7xxx series soon. So should I wait for that?

PSU - should have enough wattage for the rig & suggested graphics card. And should be stable & long lasting.

Case - not a fancy one. Just enough for the airflow required and easy access.
