Don't have skype or zoom installed but it looks like google indeed put some restriction even on manufacturers to prevent audio recording & only way around is by rooting the phone &/or using a custom rom with magisk module. I checked with playing a whatsapp video & also a youtube app video where screen recorder worked fine with audio so may be it depends on manufacturer to enable it in some phones for some apps or may be all apps.

Never used screen recording for stuff other than recording some game footage, so not much idea. But it is possible that video chat apps don't allow the sound to be recorded, if that's what he's trying to do.

S8 launched with Android 7.0, so it is stuck on 9.0 with One UI 1.0. The security update is of March 2020 though. Wish Samsung started 3 year OS updates at least for flagships but alas.
