Like @whitestar_999 said, it all depends on your luck and customs office. Mine falls under Mumbai Customs. Small items usually don't face any issues.

They generally spoof it by pasting a product price much lower than the Custom Tax limit. like $5 or $10 etc

Creating low invoice is standard practice but some sellers may not accept because now customs officials check more carefully(just typing these products name in google give results for amazon.com pages where price is easily $80+).

It depends upon the dimensions, weight of the package box, earphones are generally small package which they don't bother searching for.
I once ordered a ladies handbag from Chinapost and no customs were charged for it.
