No. Though there is a talisman that improves dodge rolling but at the cost of taking higher damage: *eldenring.wiki.fextralife.com/Crucible+Feather+Talisman
Nothing wrong with that build. I personally have enough endurance to equip the Fingerprint shield and one great weapon.

Yes. Though they are not official and could be considered hacks. I'd avoid those since you would risk getting your account banned.
Arcane mostly. Dex does not affect bleed, but it scales the damage of katanas and some curved swords which have bleed. A good bleed build could be using dual wielded katanas and then scaling dex and arcane. Top this off with some talismans like Mohg's and you should be good.
I usually choose the summon depending on what I'm up against. But around mid-game I use the Mimic Tear summon almost exclusively. It basically creates a copy of your character with the same equipment and skills. Another good summon is Black Knife Tisch, who debuffs enemy health with her abilities, but available late game only while doing Ranni's quest.
It's useless since you will gain diminishing returns after around level 40 for most attributes.

OK. So I'm using Bloodhound Fang which has Bleed Damage of 55 and Scaling requirement is Str & Dex. No Arcane. So, if I raise the str & dex the bleed damage will be more right.
I'm not sure but IIRC bleed will scale with Arcane if your weapon has a bleed affinity. If you can modify the Bloodhound's Fang then the amount of blood loss build-up will scale with Arcane, but otherwise the blood loss build-up will remain constant.
In other words, Arcane scaling is required for any weapon to scale blood loss. So, what I said earlier is partially correct.

My personal suggestion is to give all prayer books to the turtle in the Church of Vows. While other NPCs will move about or die the turtle will always be there, even in end game, and you can buy spells and incantations from it always.

Depends. The turtle is the only NPC who takes all types of spell books. Other NPCs will only take specific types. If you give those to the turtle you can buy all kinds from him.
Otherwise, you can give sorcery spell books only to Sellen and incantation books to Corhyn. However, as you progress in the game, these NPCs can die depending on your decisions and you could lose the ability to buy from them. The turtle, however will always be present even after you beat the final boss, so you can always buy spells from him.
