SLI is more mature than Crossfire.Better driver support.Xfire isnt bad by any means.
in 7K you wont get SLI nor XFire boards.
There are many SLI and CF chipsets out there so its confusing to tell which one clocks well, here are some examples,

SLI - 590SLI, 680i SLI, 650i SLI, NF4 SLI
Crossfire - ATI RD580, Intel 975X, Intel 965

SLI boards are there for Socket 939, AM2, LGA775
Crossfire boards are there for Socket 939, AM2, LGA775.

I hope this helps you.

i suggest u go for an xfire mobo. cus at ur price range it is the best option. there is an advantage on xfire boards - it can run any 2 gfx's which support xfire irrespective of there models. sli cant do that it needs both of them as same models. but in xfre if u connect 2 they'll both run at the speed of the gfx which is a lower model.
