@Saswat : When OP is opting a Processor with overclocking capability, then its not wise enough to suggest him a non K Processor.

IMO a AMD will handle this requirement with a powerful GPU.

1) Is it true that even if X6 is a hexacore processor, it is incapable of using the extra two cores? How would the cost vary if i use X6 for this rig?
2) Suppose I buy another 6850 later can i use the two cards in crossfire mode? If so how?

1. if you r doing graphic design, editing etc, X6 benefits, but for just gaming your probably better off sticking with a quad.(Phenom ii x6 1090T - 9.5K)

2. The mobo specified doesnt support CF...
If u need CF in future mobo has to be changed n PSU needs a change..
