In a nut shell stability tells how many times you computer may crash due to various reasons. In terms of OS, it means how long you can work on your PC without crashing due to software issues. Since we are talking about CPU's it means the amount of time that your computer can work without crashing due to CPU issues like overheating or overloading. Lesser the number of crashes, higher the stability.
